This is a spectacularly low-effort, high-reward way that could save your stale bread from the trash bin. I always find simple recipes like this one a real meal saviour. There are days for the more complicated recipes to slave over in the kitchen.

Recently, we bought two loaves of wheat bread with lots of sesame, grains and nuts in it. Apparently, the kids did not find such bread to their liking.

With such little time I had, this bread pudding came to mind. I strongly believe that a bread pudding recipe is absolutely an essential kitchen creations that every household must have. Though there are thousands of bread pudding recipes online, I still hang on to this one because it always turned out perfect.

I first came across this recipe from ‘Women’s Weekly’ magazine way back in the 90s. Like many other recipes, mine keep evolving over the years. I can’t recall the original recipe but this one is the closest to it.

When it comes to serving, there’s no way not to get some of that silky smooth custard sauce all over the pudding. Or perhaps with a scoop of vanilla ice-cream on top? Either way it would be decadent.
The custard sauce recipe I’m sharing here can be done in just 15 minutes or less. Just dump everything into a blender before stirring it on the stove. Works like magic! So make this when you need to make dessert a speedy affair.

Bread pudding & custard sauce

- Pudding
300-350 grams sliced bread
3 eggs (A)
1 cup fresh milk
1 cup dairy whipping cream (200-250ml box)
60 grams butter, melted
50 grams sugar
1 tablespoon vanilla essence
1/2 teaspoon cinnamon powder
a few tablespoons of toasted sliced almond and raisins (optional)
- Custard sauce
1 can evaporated milk
2 cups fresh milk (500ml)
1 cup water (500ml)
200 grams sugar
3 eggs
1 tablespoon vanilla essence
2 tablespoons custard powder
INSTRUCTIONS
- Preheat oven to 170C. Grease a 9 X 5 inches square baking dish with some butter.
- Cut bread into small pieces, mix with raisins (optional) and place in the baking dish.
- Blend all other ingredients (except almond).
- Pour onto the bread pieces in the baking dish. Sprinkle almond on top. Let rest for at least 15 minutes.
- Bake for 30 minutes until pudding is puffed in the middle.
- For the custard sauce, blend all ingredients except sugar. Pour the blended ingredients and sugar in a pot and cooked over medium flame until mixture thickens. Cool.
- Pour sauce on sliced pudding right before serving.
Puding roti
Bila ada roti di dapur yang hampir sampai tarikh luput, salah satu hidangan yang orang akan buat ialah puding roti. Jika digoogle resipi puding roti akan rambanglah mata dek beribu hasil yang akan keluar.
Kali ni kami akan kogsikan resipi puding roti yang paling ringkas kerana bahan-bahan untuk puding dan sos kastad hanya perlu diblend. Mudah kan?
Resipi ni kami dapat dari majalah ‘Women’s Weekly’ sedekad dua dulu. Dulu kami rajin gunting resipi dari majalah dan masuk fail koleksi resipi. Resipi asal telah kami olah dan inilah versi yang paling ringkas dan paling cepat untuk disiapkan. Jadi tak perlu tunggu hujung minggu nak membuatnya kerana dalam sejam semuanya akan siap selesai masak.

BAHAN-BAHAN
- Puding
300-350 gram roti
3 biji telor (A)
1 cawan (250ml) susu segar
1 cawan (250ml) krim
60 gram mentega, dicairkan
50 gram gula
1 sudu besar esen vanila
1/2 sudu kecil serbuk kayu manis
beberapa sudu raisin dan badam hiris bakar (jika mahu)
- Sos kastad
1 tin susu cair
2 cawan susu segar
1 cawan air
200 gram gula
3 biji telor
1 sudu besar esen vanila
2 sudu besar tepung kastad
CARA-CARA
- Panaskan oven 170C. Sapu mentega dalam loyang atau mangkuk kaserol (9 X 5 inci)
- Potong roti kecil-kecil dan campurkan dengan raisin. Tuang di dalam loyang.
- Blend semua bahan lain (kecuali badam).
- Tuang adunan atas roti. Tabur badam. Biarkan adunan selama sekurang-kurangnya 15 minit untk adunan meresap ke dalam roti.
- Bakar selama 30 minit hingga bahagian tengah puding naik.
- Untuk sos kastad, blend semua bahan kecuali gula. Masukkan bahan blend dan gula ke dalam periok dan kacau hingga pekat.
- Tuang sos kastad di atas puding yang telah dipotong sebaik sebelum dihdangkan.
